SWEET POTATO WAFFLE • POACHED EGG • AVOCADO • GR'EAT PROVENCE
INGREDIENTS (for 2 people – 4 waffles):
Sweet potato waffle
- 1 cup cooked sweet potato
- 1/2 cup whole oats
- 1 cup unsweetened almond milk
- 1 egg white
- 1 whole egg
- 1/2 teaspoon of sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon of yeast
- 1 teaspoon ground cumin
- ½ teaspoon of organic peel
- 1 dab of coconut oil
For the trimming
- Avocado
- Egg
- Fresh parsley
- Fresh coriander
- ½ teaspoon of sweet chili
- Balsamic cream
- Salted Granola: GR’EAT Provence
INSTRUCTIONS:
1. Peel and slice the sweet potatoes. Let them boil for about 10 minutes until the pieces are tender. Drain and cover to prevent the sweet potatoes from turning brown.
2. Preheat the waffle iron to medium temperature.
3. Mix the sweet potato and oats in a blender. Mix until you obtain a uniform texture.
4. Beat the eggs with the almond milk. Add the mixture to the blender with the sweet potato and oat base. Mix until you obtain a nice puree.
5. Using a paper towel, coat the waffle maker with coconut oil. Put 1/3 of the dough in the waffle iron. Cook for 4-5 minutes. Be careful, resist the temptation to open the waffle iron to avoid breaking the waffles. Take out the waffles and let them cool on a rack.
6. While the waffles are baking, form the poached eggs.
Getting perfect poached eggs can be tricky! Here are some tips:
Boil some water in a pan with 1 tablespoon of white vinegar. Cooking time is 4 min.
- FRESH EGGS. The fresher the egg, the more the egg white will stick to the yolk.
- VINEGAR. Use 1 tablespoon of vinegar to help the egg clots.
- GENTLY SIMMER. To prevent the egg from decomposing, prevent the water from boiling.
- Using a whisk, create a whirlpool in the water before adding the egg.
Are you having a big brunch with friends? Cook the eggs one by one for 3 minutes in advance. Immediately immerse them in cold water to stop cooking. Just before eating, immerse all the eggs for 1min30 in simmering water to complete the cooking.
7. Cut an avocado in half and then form slices lengthwise. Sprinkle with lemon so that the avocado turns brown (oxidizes).
