SWEET POTATOES • RICOTTA • MASHED AVOCADO • RED ONION • SPRING ONION • CHIVE • GR’EAT GLORY

DINNER LUNCH

RECIPE (for 2 persons):
  • 2 medium-sized sweet potatoes
  • 100g fresh ricotta cheese
  • 1 avocado
  • 1 lime
  • 1 red onion
  • Spring onion
  • Chive
  • Balsamic vinegar cream
  • Black Pepper
  • GR'EAT granola Glory

PREPARATION

  1. Pre-heat the oven at 180°C.
  2. Wash the sweet potatoes. Dry them & put them in a baking tray. Bake for about 45 min (until you can pierce the sweet potatoes easily with a fork).
  3. Slice the red onions in thin slices.
  4. Mash the avocado with some pepper & lime juice
  5. Cut the sweet potatoes length-wise in two.
  6. Add the following layers:
  • The mashed avocado
  • The chopped red onion
  • Ricotta cheese
  • Black pepper
  • Balsamic vinegar cream
  • GR'EAT Glory
  • Spring onion & chive
  • Serve & share with good company!
