Ingredients (serves 2):
- 15 scallops
- 1 apple
- Pink Belly Pepper
- Lemon juice & zest (or lime)
- Fresh Coriander
- Olive oil
- GR'EAT Glory
1. Finely slice the scallops using a very sharp knife or mandolin.
2. Sprinkle with some lemon juice & add a swirl of olive oil
3. Add some grated apple/finely cut in sticks. Soak them in lemon juice.
4. Zest the lemon
5. Crush some pink belly pepper
6. Top with GR'EAT Glory
7. Finish off with some fresh coriander leaves
