PEA GAZPACHO • CUCUMBER • GR'EAT ENERGY/PROVENCE

INGREDIENTS (4 people):

  • 400 g frozen peas
  • 1/2 organic cucumber
  • 250 ml of filtered water
  • The juice & zest of 2 limes
  • 4 spring oignons
  • A handful of mint (or basilicum)
  • 2 tbs apple vinegar (or 2 tbs Genmaï Su + 1 tbs miso for an oriental twist)
  • Olive oil
  • Balsamico cream (or Tamari for an oriental twist)
  • 1 tbs black sesame seeds
  • Shredded Parmegiano Reggiano
  • Sea salt & black pepper
  • 8 tbs GR'EAT Granola Energy or Provence

 

INSTRUCTIONS:

1. Put the mint, spring oignons, the lime juice & zest, the peas & cucumber in the blender  (putting the most heavy ingredients on top helps the blender to better chop the leafy greens). Blend until smooth. Season to taste.

2. Add a few ice cubes & blend again. Sift the mixture if desired.

3. Drizzle with olive oil & add a few drops of balsamico cream. Add some pepper.

4. Top with the Parmegiano, chopped spring oignons, some fresh mint leaves, black sesame seeds & GR'EAT Granola. Enjoy immediately.
