PEA GAZPACHO • CUCUMBER • GR'EAT ENERGY/PROVENCE
INGREDIENTS (4 people):
- 400 g frozen peas
- 1/2 organic cucumber
- 250 ml of filtered water
- The juice & zest of 2 limes
- 4 spring oignons
- A handful of mint (or basilicum)
- 2 tbs apple vinegar (or 2 tbs Genmaï Su + 1 tbs miso for an oriental twist)
- Olive oil
- Balsamico cream (or Tamari for an oriental twist)
- 1 tbs black sesame seeds
- Shredded Parmegiano Reggiano
- Sea salt & black pepper
- 8 tbs GR'EAT Granola Energy or Provence
INSTRUCTIONS:
1. Put the mint, spring oignons, the lime juice & zest, the peas & cucumber in the blender (putting the most heavy ingredients on top helps the blender to better chop the leafy greens). Blend until smooth. Season to taste.
2. Add a few ice cubes & blend again. Sift the mixture if desired.
3. Drizzle with olive oil & add a few drops of balsamico cream. Add some pepper.
4. Top with the Parmegiano, chopped spring oignons, some fresh mint leaves, black sesame seeds & GR'EAT Granola. Enjoy immediately.
