Brunch, and we got you covered with a fingerlicking recipe...a green shashuka!

Ingredients (serves 6):

  • 6 fresh organic eggs
  • 1 leek, chopped
  • 1 brocoli (sprouting is even better)
  • 1/2 Romanesco cauliflower
  • 2 handful of young spinach leaves (wash off!)
  • 2 tbsp olive oil (plus extra for greasing)
For the sauce:
  • 250g greek yogurt @fage_uk 
  • one large bunch basil
  • bunch coriander, plus extra to garnish
  • juice ½ lemon
  • clove of garlic
  • 1 lemongrass stalk, roughly chopped
  • thumb-sized piece of ginger, peeled and roughly chopped
  • 3 tbsp tahini
To garnish
  • Paprika powder
  • 1 tsp sea salt
  • Black pepper

  1. Turn on your oven to 180°C. Lightly grease a large oven proof dish
  2. In a large pot, bring salted water to boil. Cook the brocoli & Romanesco for 3 min, no more!
  3. Heat your oil in a wok pan and add the leek. Cook for about 5 mins until nicely charred and softened. Place in a mixing bowl.
  4. Add your spinach to the pan with a touch more oil and stir till cooked & reduced down. Add this to the mixing bowl. 
  5. In a blender, place the yogurt, basil, coriander, lemon juice, garlic, lemongrass, ginger, tahini, sea salt and one egg. Blend until combined into a smooth creamy texture.
  6. Pour this into the bowl with your leeks and spinach and stir to combine. Then pour into your oven dish. 
  7. Arrange your broccoli, Romanesco cauliflower around the dish, pushing them lightly into the mix. Try to create spaces to crack the eggs in – this helps the eggs to keep their shape as they bake.
  8. Crack the remaining eggs into the gaps. 
  9. Bake in the oven for 15 mins.
  10. Sprinkle with paprika. Garnish with fresh coriander and sprinkle with GR’EAT granola Glory.
☝🏼did you know that when you use fresh eggs, all your dishes are a success more easily? Indeed, the eggwhite is more firm and sticks more to the egg yolk. Thus binding more your cakemixs, making beautiful poached eggs (tried many tricks for those ones, but that’s a major part of the succes)
