CREAMY ⁠CUCUMBER & CAULIFLOWER SOUP • MINT • GR'EAT PROVENCE

INGREDIENTS (for 4):

  • 4 mint branches ⁠
  • 90g grated ginger⁠
  • 1/2 half cauliflower ⁠
  • 3 cucumber (without skin & seeds) ⁠
  • 1 garlic glove 
  • 500g Greek yoghurt ⁠
  • 2 spoons of lemon juice 
  • 60ml olive oil 
  • GR'EAT Granola Provence
  • salt & white pepper ⁠

 

INSTRUCTIONS:

1. For 800ml water in a middle-size saucepan & add the mint branches, the grated ginger and salt⁠.

2. Boil the water, then add the cauliflower 2-3 minutes until cooked but crunchy⁠.

3. Drain the mint & ginger and keep it aside⁠.

4. ⁠Mix the sliced cucumber in a bowl with the ginger, garlic, yoghurt, lemon juice, salt & pepper until having a creamy soup. ⁠

5. Store at least 1h in the fridge.

TIME TO DRESS: pour the cold soup in a plate, top with some crunchy cauliflower and drizzle⁠ with olive oil. Finish with our magical ingredient: GR'EAT Granola Provence!
