CREAMY CUCUMBER & CAULIFLOWER SOUP • MINT • GR'EAT PROVENCE
INGREDIENTS (for 4):
- 4 mint branches
- 90g grated ginger
- 1/2 half cauliflower
- 3 cucumber (without skin & seeds)
- 1 garlic glove
- 500g Greek yoghurt
- 2 spoons of lemon juice
- 60ml olive oil
- GR'EAT Granola Provence
- salt & white pepper
INSTRUCTIONS:
1. For 800ml water in a middle-size saucepan & add the mint branches, the grated ginger and salt.
2. Boil the water, then add the cauliflower 2-3 minutes until cooked but crunchy.
3. Drain the mint & ginger and keep it aside.
4. Mix the sliced cucumber in a bowl with the ginger, garlic, yoghurt, lemon juice, salt & pepper until having a creamy soup.
5. Store at least 1h in the fridge.
TIME TO DRESS: pour the cold soup in a plate, top with some crunchy cauliflower and drizzle with olive oil. Finish with our magical ingredient: GR'EAT Granola Provence!
