PROVENCE WAFFLE • SWEET POTATO • AVOCADO

HOW TO:

1. For 4 waffles, peel the sweet potatoes and slice them. Boil the slices for 10 minutes until tender. Drain them and cover while the waffle iron heats up to a medium temperature. Blend the sweet potato and half a cup of oats in a blender until you get a smooth texture. Whisk one egg white and one whole egg with one cup of unsweetened almond milk. Add this mixture to the sweet potato and oat base in the blender. Blend until you achieve a waffle batter consistency. Grease the waffle iron with coconut oil and start baking (4 to 5 minutes).

2. Slice the avocado and drizzle with lemon juice to prevent discoloration. Poach an egg in gently simmering water with a bit of vinegar for 4 minutes. Create a whirlpool with a whisk before gently sliding the egg into the pot.

3. Serve the waffles with the avocado and poached egg, seasoned with pepper, some freshly chopped parsley and coriander, a dash of balsamic glaze, and finally, topped with GR’EAT Granola Provence.
