TOMATOES • BURRATA • PEACH • GR'EAT PROVENCE

INGREDIENTS (serves 4):

  • 6 heirloom tomatoes
  • 10 datterino or cherry tomatoes
  • 1 burrata
  • A handful of blueberries
  • A handful of mulberries
  • 1 white (flat) peach
  • 1 lemon
  • 1 lime
  • Extra virgin olive oil
  • Balsamic vinegar
  • Fresh basil
  • GR'EAT Granola Provence

 

INSTRUCTIONS: 

1. Choose multiple shades & sizes of heirloom tomatoes. Wash the tomatoes carefully & dry them using a cloth. Important: Cut them crosswise in fine slices (ca. 0.5 cm) to discover the beautiful flowers formed by the flesh. Carefully arrange the slices on a large plate, alternating colours.

2. Cut the dattarino tomatoes lengthwise. Add to the plate.

3. Drizzle with olive oil, balsamic vinegar, Maldon sea salt flakes or fleur de sel.

4. Tear apart the burrata & dipose the small pieces & arrange along the plate.

5. Pepper.

6. Slice small pieces of a white (flat) peach. Dispose.

7. Zest some lime & lemon.

8. Add some mulberries & blueberries.

9. Add a few fresh whole basil leaves.

10. Sprinkle with GR'EAT Granola Provence.
