VANILLA ALMOND PORRIDGE • BLUEBERRY COMPOTE • GR'EAT ADVENTURE

INGREDIENTS:

Porridge

  • 80g rolled oats, soaked for min 30 min in 200 ml water
  • 200 ml almond milk
  • A pinch of (Himalayan) seasalt
  • Freshly grated vanilla or extract

Blueberry compote

  • 200g frozen wild blueberries
  • a sprinkle of lemon juice & zest
  • 1/2 tbs maple syrup or cane sugar

Topping

 

INSTRUCTIONS:

1. Place the blueberries, the syrup, lemon juice & zest and 1 tbs water in a small pot. Let it come to boil, once the jam starts to bubble, set it aside.

2. Place the porridge ingredients in a small pan. Cook on medium heat, stirring continuously for 4 min.

3. Serve into 2 bowls, add a generous spoon of jam in the middle. Add a tbs almond butter, sprinkle with granola. Finish off with some fresh basil! Share under good company!
