TOAST • CREAM CHEESE • STRAWBERRY • PICKLED RED ONION • GR'EAT PROVENCE
INGREDIENTS (for 2 toasts):
Pickled red onions (marinate 6h)
- 2 big red onions
- white vinegar
- apple cider
- water
- 1 tsp. cane sugar
- sea salt & pepper (peppercorns)
Toasts
- 6 strawberries, approximately (!attention point: buy it organic as the most concentrated fruit in pesticide)
- 75 g cream cheese
- 30 g feta cheese
- 1 lime
- a few basilic leaves
- balsamic cream
- olive oil
- salt & pepper
- GR'EAT Granola Provence
1. Slice the red onions in thin slices.
2. Boil some water.
3. Place the onions into a jar and add white vinegar, cider, 1 tsp. cane sugar and the salt & pepper. You should arrive +- at the half of jar capacity, onions included, but adapt according to your taste.
4. Then pour the boiled water until it covers the whole mixture in the jar.
5. Let it marinade for at least 6 hours. Keeps well in the refrigerator.
Toast
1. Spread the toast with a thick layer of cream cheese, add a drizzle of olive oil and salt & pepper.
2. Cover the toast with the pickled red onion slices.
3. Top with sliced strawberries and sprinkle the feta cheese across the toast.
4. Finish with a drizzle of balsamic cream, the lime zest and the basilic.
5. Add the extra magical topping: GR'EAT Granola Provence.
