VANILLA ALMOND PORRIDGE • BLUEBERRY COMPOTE • GR'EAT ADVENTURE
INGREDIENTS:
Porridge
- 80g rolled oats, soaked for min 30 min in 200 ml water
- 200 ml almond milk
- A pinch of (Himalayan) seasalt
- Freshly grated vanilla or extract
Blueberry compote
- 200g frozen wild blueberries
- a sprinkle of lemon juice & zest
- 1/2 tbs maple syrup or cane sugar
Topping
- Almond butter
- Basil
- GR’EAT granola Adventure
INSTRUCTIONS:
1. Place the blueberries, the syrup, lemon juice & zest and 1 tbs water in a small pot. Let it come to boil, once the jam starts to bubble, set it aside.
2. Place the porridge ingredients in a small pan. Cook on medium heat, stirring continuously for 4 min.
3. Serve into 2 bowls, add a generous spoon of jam in the middle. Add a tbs almond butter, sprinkle with granola. Finish off with some fresh basil! Share under good company!
