ROASTED BUTTERNUT • FETA • SPICY PARSLEY SALSA • CORN
INGREDIENTS:
- 1 butternut
- 1 corn
- 50g feta cheese
- 1 bunch of parsley
- 2 chili peppers
- 1 lime
- olive oil
- salt & pepper
- GR'EAT Granola Roma
INSTRUCTIONS:
1. Cut the butternut in wedges, place in a baking thin covered with baking paper & bake in the oven at 180°C for 20-25min.
2. In the meantime, prepare the spicy parsley salsa: chop the parsley, cut the pepper in small pieces, add it in a bowl with 20ml olive oil, the lime juice. Salt and pepper.
3. Grill the corn at medium heat in a pan until golden. Cut off the grains.
4. Dress on a plate in the following order: butternut, the drizzled salsa, the corn, crumbled feta and the final touch: our GR'EAT Granola Roma. Finish off with a few flat parsley leaves. ENJOY!
