ROASTED BUTTERNUT • FETA • SPICY PARSLEY SALSA • CORN

INGREDIENTS:
  • 1 butternut 
  • 1 corn 
  • 50g feta cheese 
  • 1 bunch of parsley 
  • 2 chili peppers
  • 1 lime
  • olive oil 
  • salt & pepper 
  • GR'EAT Granola Roma

 

INSTRUCTIONS:

1. Cut the butternut in wedges, place in a baking thin covered with baking paper & bake in the oven at 180°C for 20-25min.⁠ 

2. In the meantime, prepare the spicy parsley salsa: chop the parsley, cut the pepper in small pieces, add it in a bowl with 20ml olive oil, the lime juice. Salt and pepper. ⁠

3. Grill the corn at medium heat in a pan ⁠until golden. Cut off the grains.⁠

4. Dress on a plate in the following order: butternut, the drizzled salsa, the corn, crumbled feta and the final touch: our GR'EAT Granola Roma. Finish off with a few flat parsley leaves.⁠ ENJOY!
